  • Wash the lentils and cook them in a pot with water until tender.

  • In a large skillet, heat the oil and add the cumin seeds. When they start to sizzle, add the onion and cook until golden brown.

  • Add the minced garlic and grated ginger. Cook for a couple of minutes.

  • Add the tomatoes and spices (turmeric, ground coriander, garam masala) and cook until the tomatoes have softened.

  • Add the cooked lentils to the skillet and mix well. Cook for a few more minutes.

  • For the tadka, heat a little oil in a small skillet and add a pinch of cumin seeds and red chili powder. Pour this mixture over the dal.

  • Serve hot, garnished with fresh cilantro leaves.

2. Mexico: Garlic Mushroom Tacos

Tacos are an iconic dish in Mexican cuisine, and this vegan version with garlic mushrooms is a tasty and easy-to-make delight.

Ingredients:

  • 250g fresh mushrooms, sliced

  • 2 cloves garlic, minced

  • 1 jalapeño pepper, chopped (optional)

  • 2 tablespoons olive oil

  • Salt to taste

  • Corn tortillas

  • Optional toppings: chopped fresh cilantro, sliced red onion,hot sauce, sliced avocado

Instructions:

  • Heat the olive oil in a large skillet over medium heat. Add the garlic and jalapeño pepper and cook until fragrant.

  • Add the mushrooms to the skillet and sauté until tender and golden brown, about 5-7 minutes.

  • Season with salt to taste and mix well.

  • Heat the corn tortillas in a hot skillet or microwave.

  • Fill the tortillas with the garlic mushrooms and serve with desired toppings.

3. Italy: Asparagus Risotto

Risotto is a classic Italian dish, and this version with asparagus is a creamy and comforting delight that highlights the fresh flavors of spring.

  • In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until soft and translucent.

  • Add the Arborio rice to the skillet and stir to coat in oil. Cook for a few minutes until the rice begins to lightly brown.

  • If using white wine, pour it into the skillet and cook until the alcohol has evaporated.

  • Add the asparagus to the skillet and cook for a couple of minutes.

  • Begin adding the hot vegetable broth, one cup at a time, stirring constantly and allowing each cup to be absorbed before adding more.

  • Continue this process until the rice is tender and creamy but still al dente.

  • If desired, stir in the grated Parmesan cheese into the risotto.

  • Season with salt and pepper to taste.

  • Serve hot, garnished with fresh chopped parsley.
