1 cup yellow lentils
2 tomatoes, chopped

Salt to taste
2 tablespoons vegetable oil
1 tablespoon vegan butter (optional)

Instructions:
Wash the lentils and cook them in a pot with water until tender.
In a large skillet, heat the oil and add the cumin seeds. When they start to sizzle, add the onion and cook until golden brown.
Add the minced garlic and grated ginger. Cook for a couple of minutes.
Add the tomatoes and spices (turmeric, ground coriander, garam masala) and cook until the tomatoes have softened.
Add the cooked lentils to the skillet and mix well. Cook for a few more minutes.
For the tadka, heat a little oil in a small skillet and add a pinch of cumin seeds and red chili powder. Pour this mixture over the dal.

250g fresh mushrooms, sliced

Instructions:
Heat the olive oil in a large skillet over medium heat. Add the garlic and jalapeño pepper and cook until fragrant.
Add the mushrooms to the skillet and sauté until tender and golden brown, about 5-7 minutes.
Season with salt to taste and mix well.
Heat the corn tortillas in a hot skillet or microwave.
Fill the tortillas with the garlic mushrooms and serve with desired toppings.
3. Italy: Asparagus Risotto
Risotto is a classic Italian dish, and this version with asparagus is a creamy and comforting delight that highlights the fresh flavors of spring.
Ingredients:
1 cup Arborio rice
1 bunch asparagus, cut into small pieces
1 small onion, chopped
2 cloves garlic, minced
4 cups hot vegetable broth
1/2 cup dry white wine (optional)
2 tablespoons olive oil
1/4 cup grated Parmesan cheese (optional)
Fresh chopped parsley for garnish
Instructions:
In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until soft and translucent.
Add the Arborio rice to the skillet and stir to coat in oil. Cook for a few minutes until the rice begins to lightly brown.
If using white wine, pour it into the skillet and cook until the alcohol has evaporated.
Add the asparagus to the skillet and cook for a couple of minutes.
Begin adding the hot vegetable broth, one cup at a time, stirring constantly and allowing each cup to be absorbed before adding more.
Continue this process until the rice is tender and creamy but still al dente.
If desired, stir in the grated Parmesan cheese into the risotto.
Season with salt and pepper to taste.
