GRILLED PORTOBELLO MUSHROOM BURGERS
Ingredients:
4 large Portobello mushrooms
1/4 cup balsamic vinegar
2 tablespoons olive oil
2 tablespoons soy sauce
2 cloves garlic, minced
1 teaspoon dried oregano
4 whole wheat burger buns
Lettuce, tomato slices, red onion slices, avocado, and other desired toppings
Instructions:
Prepare the marinade:
1. In a small bowl, whisk together the balsamic vinegar, olive oil, soy sauce, minced garlic, dried oregano, salt, and pepper.
Marinate the mushrooms
2. Clean the Portabello mushrooms and remove the stems. Place them in a large resealable plastic bag or a shallow dish, and pour the marinade over them. Let them marinate for at least 30 minutes, turning occasionally to ensure they are evenly coated.
Preheat the grill:
3. Preheat your grill to medium-high heat.
Grill the mushrooms:
4. Remove the mushrooms from the marinade and shake off any excess. Place the mushrooms on the grill, gill side down. Grill for about 5-7 minutes on each side, or until tender and nicely charred.
Toast the buns:
5. While the mushrooms are grilling, lightly toast the burger buns on the grill for 1-2 minutes until golden brown.
Assemble the burgers:
6. Place a grilled Portobello mushrooms on the bottom half of each bun. Add your favorite toppings such as lettuce, tomato slices, red onion slices, avocado, and any condiments you like.
Serve:
7. Top each mushroom with the top half of the bun and serve immediately.
