Jamaica Spritz

Ingredients:

  • 1 cup dried hibiscus flowers (Jamaica)

  • 4 cups water

  • 1/2 cup sugar (adjust to taste)

  • 1/4 cup fresh lime juice (about 2 limes)

  • 1/2 cup sparkling water or club soda

  • 1/2 cup white wine or prosecco (optional for an alcoholic version)

  • Ice cubes

  • Lime slices and fresh mint leaves for garnish

Instructions:

Prepare the Hibiscus Syrup:

Rinse the dried hibiscus flowers unders cold water. In a large pot, bring 4 cups of water to a boil. Add the dried hibiscus flowers and simmer for 10-15 minutes. Remove from heat and let steep for an additional 10 minutes. Strain the hibiscus tea through a fine mesh sieve or cheesecloth into a large bowl or pitcher. Stir in sugar while the tea is still warm until fully dissolved. Adjust sweetness to taste. Let the hibiscus syrup cool to room temperature, then stir in fresh lime juice.

Mix the Spritz:

  • Fill glasses with ice cubes.

  • Pour 1/4 cup of the cooled hibiscus syrup into each glass.

  • Top with 1/4 cup sparkling water or club soda.

  • If using white wine of prosecco, add 1-2 tablespoons to each glass for a light alcoholic touch.

Garnish and Serve:

  • Garnish with lime slices and fresh mint leaves.

  • Stir gently and serve immediately
