MEDITERRANEAN CHICKPEA SALAD

2 cans (15 ounces each) chickpeas, drained and rinsed
1 cucumber, diced
1 pint cherry tomatoes, halved
1 red bell pepper, diced

1/4 cup kalamata olives, pitted and halved
1/4 cup fresh parsley, chopped
1/4 cup fresh mint leaves, chopped
1/3 cup crumbled feta cheese (optional, omit for vegan version)
For the Dressing:
1/4 cup extra virgin olive oil
2 tablespoons fresh lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
Instructions:
In a large mixing bowl, combine the chickpeas, diced cucumber, halved cherry tomatoes, diced red bell pepper, thinly sliced red onion, halved Kalamata olives, chopped parsley, and chopped mint leaves. Toss gently to combine.
In a small bowl or jar, whisk together the extra virgin olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and pepper to make the dressing.
